Mexican Lasagna Recipe

A commenter requested a Mexican Lasagna recipe and our take on it is below. Do you have other recipes for Mexican Lasagna? If so, share them in the comments.

Mexican Lasagna

1 pound ground beef
1 (17 oz.) can kernel corn, drained
1 cup salsa
1 (15 oz.) can tomato sauce
1 envelope taco seasoning mix
1 (16 oz.) carton cottage or ricotta cheese
1 (16 oz.) can refried beans or black beans
1 teaspoon oregano
10 corn tortillas
1 1/2 c. shredded Cheddar & Monterey Jack cheese, mixed

Brown meat; add corn, tomato sauce, salsa and seasoning mix. Simmer, stirring often for 5 minutes.

In a separate bowl combine cottage cheese and oregano. Line bottom of greased 9 x 13 inch pan with 5 tortillas, overlapping edges. Top with 1/2 of meat mixture. Layer the cottage or ricotta cheese. Layer the beans. Arrange remaining 5 tortillas over beans. Spread remaining meat over all and top with shredded cheese.

Bake at 375 degrees for 30 minutes or until cheese is melted. Serve with guacamole, sour cream, picante sauce, and a side salad.

I have not tryed this recipe yet, but I think my mom will like it since we are from Bosnia and we like diferent kinds of food. Anyways I hope I have the time to make this recipe. I mean with school and all I will ask my mom to help me make it, but if she does not have the time I will try by myself...

I have used Mexicorn (found in practical, small cans) in this as well, and it adds a little flare. Ground turkey helps cut down the fat and does not take away from this recipe. I don't know why I hadn't thought of using black beans, awesome-thanks for the idea!
