Turtle Candy

This makes a great gift for your neighbor or a co-worker.

About 25 soft caramels, melted in the microwave
1 ½ cups pecans
2 Tablespoons whipping cream
1 cup semi-sweet chocolate chips

Add cream to melted caramels and stir until smooth. Add pecans, and drop onto waxed paper. Melt chocolate chips and pour a small amount over each candy. Let stand until firm; wrap individually or box as a gift between sheets of waxed paper.

3 eggs
3/4 cup + 3 tbsp granulated sugar
1 3/4 cups all-purpose flour
2 1/2 tsp baking powder
1 1/4 tsp ground cinnamon
5 tbsp milk
9 tbsp unsalted butter, melted

Beat together the eggs and sugar until creamy. Sift the flour, baking powder and cinnamon into the bowl and add the milk. Mix until smooth. Add the butter and beat until homogenous. Rest in the refrigerator for 20 minutes. Heat over to 375 degrees. Pipe the mixture into greased and floured shell-shaped madeleine moulds. Alternatively you can use 2-inch paper baking cases. Bake for 6 minutes. Remove from the moulds immediately and cool on a wire rack. Makes 15.
