40 Days Sans Meat: Ideas, Anyone?

What are you giving up for Lent? Christen Nehmer, videographer for The Food Channel, is giving us her experience in going meatless. Follow along throughout the 40 days of Lent.

Day 28:

Another repeat, I KNOW! Haha. Sometimes I just get home and don’t want to do anything. My goal this weekend is to cook up something different. I need ideas, people!

For dinner, Brent and I went to 5 Spice. They have a really good take out deal on weeknights. Plus, their lobster puff wontons are a-ma-zing.

This was also another encounter with tofu. I’m curious to cook with it, I guess in stir-fry or something. Once you get over the texture, it’s pretty tasty. I mean, it just takes on whatever flavor of sauce you’re using.

I think the weather is supposed to be decent this weekend, which means plenty of grilling opportunities. I think I might try swordfish again with grilled veggies…or roasted. I’ve really been into that lately. Roasting is so easy and it really brings out a different flavor of the starches (or whatever you roast). I’m not an onion fan, but man, when they are roasted…that’s a different story. Yummm.

Breakfast: Caramel Macchiato Oatmeal
Lunch: Mixed Greens salad from the salad bar
Dinner: Buddhist Feast from 5 Spice w/tofu
