Father’s Day comes at a time of year when grilling a great meal for Dad just seems like the right thing to do, whether someone else takes over the grilling duties or you let Dad do his thing as usual. So that was our thinking as we put together our special menu for Father’s Day.

We suggest you start off the Father’s Day festivities with a cool wedge salad with green goddess dressing.
For beverages, you’ll want to have some cold beer or soft drinks iced down, or for something a bit more special, try our recipe for refreshing blueberry lemonade with fresh mint.
For the main dish, we offer a meaty choice of smoky ribs grilled to perfection or family-friendly Tuscan Brick Chicken (maybe serve both if there’s a crowd).
For the side dish, roasted potatoes with grilled pepper and onions lets you do almost the whole meal out on the backyard barbie.
For dessert, we offer two suggestions: an old-fashioned chocolate-mayonnaise cake Mom can make ahead on Saturday, or an easy-to-prepare peach & blueberry shortcake made with refrigerated biscuit dough that helps keep Mom’s time in the kitchen to a minimum. In the meantime, here are some other ways you can make sure Dad enjoys his day.
- If he’s a big sports fan, let him watch the big game or race, and share in the cheering.
- If Dad’s a big music lover, put on some of his favorite CD’s or plug his iPod into to the speakers, and crank it up loud like he likes it.
- Let him relax with the Sunday newspaper, or nap on the couch if he feels like it.
- Watch a ‘guy flick’ together in the theater or at home. Something with lots of explosions, car chases and action heroes. Or whatever he’s into.
- Encourage the kids to make handmade Father’s Day cards. And the opening of presents should be conducted with a lot of fanfare.
- Make this year’s celebration one he won’t soon forget. But don’t fret about it. Most dads aren’t really too hard to please. Let the Dad times roll!
