Can I Freeze Cheesecake Filling Before Baking?

Q. I was intending to prepare a BAKED Cheesecake which contains full fat soft cheese and soured cream, then freeze it before baking a week later. Is this okay?
A. Our chefs don't recommend it. Unless you're planning to make ice cream, freezing any kind of dairy product is generally not a good idea.
