How Large Is a Large Egg?

Ask the Chef

QUESTION:
How many large eggs = 1 jumbo egg or 1 jumbo egg = ____ oz?

Thanks

ANSWER:
Our research shows that 1 jumbo egg = 2.5 oz and a large egg = 2 oz.

If you are just using one egg in a recipe, you can use either the large or jumbo size with no noticeable effect. If using two or more eggs, you will want to make the appropriate adjustment – there are a couple of charts at the American Egg Board’s web site that you should find helpful.

The chart below, from the AEB, illustrates egg sizes as measured by the total weight of a dozen eggs or of 30 dozen.
