Nothing warms you on a crisp, cool day like a hot bowl of soup followed by a tender, hearty meal. That’s the concept behind the Smith & Wollensky new feature menu promotion, the “Liquid Lunch.”

Smith & Wollensky Executive Chef Matt King was inspired to feature braised items, and the key to braising is liquid—so the Liquid Lunch promotion got stirred up.

Diners start with a lunchtime indulgence, a Samuel Adams Beer. From there they choose either the Famous Split Pea Soup or Soup du Jour, then select one of three signature wine and stock braised items: Lamb Shank, Beef Pie with Puff Pastry or Crackling Pork Shank.

The Lamb Shank is braised with port wine and veal stock, and seasoned with star anise, coriander seed, and black peppercorns. It’s served with caramelized carrots, onions and celery.

The Beef Pie features braised beef cheek cooked in red wine with rosemary, thyme, garlic, carrots and celery and roasted cipollini onions. It’s baked and served in a cast iron skillet topped with crispy puff pastry and a lovely roasted onion crema.

The Cracklin' Pork Shank is cooked confit (n duck fat). The crunchy skin offsets the tender meat, and it’s accented with a pineapple mustard glaze and beer and apple sauerkraut.

“It’s a great menu where you come in, have a bowl of soup, and one of the braised items,” King says.  “We’re offering them for the winter because they’re so hearty, rich and full of flavor. They’re a great item on that cold winter’s day.”
