Gareth Jones has learned his trade since the 60s, in France, in kitchens, markets, farms and homes across Europe. His mantra is good food is the right of all. He talks about gastronomy as he thinks it is meant to be: the best food, in peak season, from interesting varieties and breeds, simply prepared.
