The sweet and sour flavor notes of the braised red cabbage match perfectly with an earthy main course item such as a roast chicken or a braised beef item. When using wine in cooking always use a wine that you would enjoy drinking with the meal.

Ingredients

  • 1 cup chopped onion
  • 2 cups peeled, cored, chopped apple
  • 4 tablespoons butter
  • 1 large head red cabbage, cored, shredded
  • 3 cups red wine
  • 1/2 cup raspberry vinegar
  • 1 teaspoon snipped chives

Preparation

    In food processor, combine onion and apple; pulse until smooth.

    Melt butter over medium heat in large pot. Add the onion apple mixture and cook for 4-5 minutes, being careful not to let it brown.

    Add cabbage and wine to pot; stir to blend. Cover and simmer over medium-low heat until wine is reduced and cabbage is tender. Add vinegar and simmer until liquid is reduced to syrup-like consistency.

    Place in a serving bowl and garnish with chives.
