Ingredients

  • 15 medium ancho chilies
  • 9 tablespoons ground cumin
  • 9 tablespoons ground coriander
  • 6 tablespoons ground black pepper
  • 6 tablespoons dried thyme leaves
  • 6 tablespoons dried Mexican oregano
  • 1½ cup Kosher salt
  • 6 tablespoons dry mustard
  • 3 tablespoons onion powder
  • 3 tablespoons garlic powder

Preparation

    Preheat oven to 300ºF.

    Remove the stems and seeds from the ancho chilies.

    Bake the ancho chilies in the oven 5 minutes at 300°F.

    In a spice grinder, combine the Mexican oregano, dried thyme and ancho chilies and grind until fine. Empty into a clean bowl with the remaining spices.

    Package as desired.
