Case Solved Chicken Rotel Casserole

Jack Merritt, Sheriff of Greene County, Missouri, contributed this particular recipe. All recipes in the cookbook are from law enforcement professionals. Ingredients

  • 4 chicken breasts
  • 1 onion, cut in slivers
  • 1 cup celery, diced
  • 1 stick butter
  • 7 ounces thin spaghetti
  • 1 lb. Velveeta cheese
  • 1 can (10 oz.) Rotel
  • 1 small can mushrooms (optional)
  • 2 cups chicken broth

Preparation

  • 1
    Boil chicken breasts and de-bone, or use boneless chiken breasts.

    Saute onion and celery in butter.
  • 3
    Boil spaghetti according to package instructions.
  • 4
    Mix cooked spaghetti with all ingredients.
  • 5
    Add chicken broth.
  • 6
    Bake 20-30 minutes at 350 degrees in a 9 x 13 baking dish.
