Acai Berry Mango Sorbet

Ingredients

  • 1 & 1/3 cups frozen, sweetened Acai
  • 3/4 cup sugar
  • 1/2 cup water
  • 6 cups mango, frozen
  • 2 bananas, sliced
  • 1/4 cup freshly squeezed lime juice
  • 1/4 teaspoon kosher salt

Here’s a refreshing summer recipe using the hot Superfood ingredient from Brazil’s Amazon Rainforest, the acai berry. This makes a wonderful light dessert that’s perfect for a hot and humid day.

Why Try? Lightly sweet and loaded with antioxidants…what’s not to like?

Foodie Byte: For a real treat, try serving the sorbet atop a crumbled shortbread cookie (as shown in the recipe photo).

Preparation

  1. Place the sugar and 1/2 cup water in a small saucepan and cook until the sugar dissolves. Set aside.
  2. Place the mangoes and bananas in a food processor fitted with a steel blade and puree. Combine the sugar mixture, acai, lime juice, and salt with the mango banana puree.
  3. Refrigerate until cold. Freeze in an ice cream machine according to manufacturer's directions. Serve directly from the ice cream machine or freeze.
