Aged Bleu Hair Steak


  • 1 aged (recommended age of 60-70) steak; your choice of cut
  • 1/8 cup crumbled bleu cheese
  • Salt & pepper, to taste
  • 1/4 cup butter

Generally people tend to prioritize the tenderness of meat over flavor—everything we eat is young. Most commercially processed beef is between 10-24 months old—this makes for a blander cut of meat. Older meat, that has had time to really experience life, is packed with flavors that reflect those experiences; meaning that you get to taste what the meat should taste like—a more naturally occurring and complex flavor profile.

Note: try and steer clear of any flesh that could be high in medications or preservatives—look for organic.

  1. Heat pan (or grill) to high heat.
  2. Season steak with salt and pepper to taste.
  3. Melt butter in pan.
  4. Place steak on the hot pan; grill 3 minutes; turn.
  5. Scatter bleu cheese crumbles over steak while grilling for another 3 minutes.
  6. Remove meat from heat, let stand a few minutes, and serve.
