Ancho Cumin Blackening Spice
Ingredients
- 15 medium ancho chiles
- 9 tablespoons ground cumin
- 9 tablespoons ground coriander
- 6 tablespoons ground black pepper
- 6 tablespoons dried thyme leaves
- 6 tablespoons dried Mexican oregano
- 1 1/2 cup kosher salt
- 6 tablespoons dry mustard
- 3 tablespoons onion powder
- 3 tablespoons garlic powder

Preparation
- Preheat oven to 300ºF.
- Remove the stems and seeds from the ancho chiles.
- Bake the ancho chiles in the oven 5 minutes at 300°F.
- In a spice grinder, combine the Mexican oregano, dried thyme and ancho chiles and grind until fine. Empty into a clean bowl with the remaining spices.
- Package as desired.
