Ancho Cumin Blackening Spice

Ingredients

  • 15 medium ancho chiles
  • 9 tablespoons ground cumin
  • 9 tablespoons ground coriander
  • 6 tablespoons ground black pepper
  • 6 tablespoons dried thyme leaves
  • 6 tablespoons dried Mexican oregano
  • 1 1/2 cup kosher salt
  • 6 tablespoons dry mustard
  • 3 tablespoons onion powder
  • 3 tablespoons garlic powder

Preparation

  1. Preheat oven to 300ºF.
  2. Remove the stems and seeds from the ancho chiles.
  3. Bake the ancho chiles in the oven 5 minutes at 300°F.
  4. In a spice grinder, combine the Mexican oregano, dried thyme and ancho chiles and grind until fine. Empty into a clean bowl with the remaining spices.
  5. Package as desired.
