Braised Red Cabbage
Ingredients
- 1 large head red cabbage, cored, shredded
- 1 cup chopped onion
- 2 cups peeled, cored, chopped apple
- 4 tablespoons butter
- 3 cups red wine
- 1/2 cup raspberry vinegar
- 1 teaspoon snipped chives

Preparation
- In food processor, combine onion and apple; pulse until smooth.
- Melt butter over medium heat in large pot. Add the onion apple mixture and cook for 4-5 minutes, being careful not to let it brown.
- Add cabbage and wine to pot; stir to blend. Cover and simmer over medium-low heat until wine is reduced and cabbage is tender. Add vinegar and simmer until liquid is reduced to syrup-like consistency.
- Place in a serving bowl and garnish with chives.
