Brown Sugar Bark

Ingredients

  • 1 1/4 cups firmly packed light brown sugar
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 3/4 teaspoon salt
  • 1 cup unsalted butter (2 sticks)
  • 1/3 cup maple syrup
  • 2 tablespoons coarse sugar crystals

These cookies are a great balance of the classic holiday flavors of ginger and brown sugar, making them crunchy and full of flavor. Try serving these Brown Sugar Bark cookies with cherry sauce or other toppings.

Preparation

  1. Position a rack in the middle of the oven and a second rack in the upper third.
  2. Preheat oven to 350ºF.
  3. Sift together flour, baking soda, cloves, ginger and salt in a bowl.
  4. In a separate bowl, cream butter and brown sugar until smooth. Slowly pour in maple syrup and beat until combined. Add the flour mixture 1/2 cup at a time. Continue beating until the mixture comes together into a dough, about 3 minutes.
  5. Transfer the dough to a lightly floured work surface, divide it in half, and form each half into a 6-inch disk. Wrap each disk in plastic food wrap and refrigerate for 1 hour.
  6. On a lightly floured work surface, roll out 1 dough disk into an oval about 1/2-inch thick. Transfer the dough to a prepared baking sheet lined with parchment baking paper and continue to roll until it is 1/8-inch thick. Sprinkle 1 tablespoon coarse sugar evenly over the surface. Repeat with the second dough disk.
  7. Bake until firm and brittle, about 20 minutes, alternating the pans between the 2 oven racks after the first 10 minutes of baking. Let cool on a wire rack.
  8. Break the pan cookies into large pieces (about 12 per pan) and top with Brandied Cherry Sauce.
