Candied Orange Peel
Ingredients
- 3-4 oranges, as blemish-free as possible
- 6 tablespoons lemon juice
- Water to cover
- 3 cups water
- 2 cups sugar + 1 additional cup
- 1 tablespoon orange flavoring

Preparation
- Cut the peels off the oranges, cutting away any of the stringy pith. Cut into narrow strips. Place peels and 1 1/2 tablespoon of the lemon juice in a saucepan and barely cover with water. Bring to a boil and let boil for 1 minute. Drain, rinse peels with cold water, and then repeat the process two more times, using 1 1/2 tablespoons lemon juice and a new covering of water each time.
- After you have done this three times, set the peels aside and place the 3 cups of water plus 2 cups of sugar in the saucepan and bring to a boil. Add the orange peels and another 1 1/2 tablespoons lemon, and let the mixture boil rapidly for a few minutes, then bring down to a simmer for 20 minutes.
- Remove from heat, add the flavoring and cover the saucepan and leave it for several hours or overnight. Remove peels from the sauce and lay out on parchment paper to dry. Toss additional granulated sugar over the peels before they are completely dry. Store covered and use within 3 weeks.
