Caramelized Peach Tart Tatin
Ingredients
- 6 large peaches, quartered
- 3/4 cup sugar
- 3 tablespoons water
- 4 tablespoons butter, cubed
- 1 Refrigerated pie crust
This dessert is rustic but elegant—a perfect way to make the most of sweet fresh peaches at their harvest peak.

Preparation
- Preheat oven to 400ºF.
- Combine sugar and water in an 8-inch cast iron skillet. On medium heat, cook until sugar dissolves and starts to caramelize to light brown color. Remove from heat and stir in butter.
- Arrange the peach quarters upside down over caramelized sugar.
- Cook over low heat for 10 minutes.
- Top peaches with pie crust. Push down the edges so there is no dough outside the skillet.
- Bake for 20 minutes. Loosen around the edges and quickly invert onto a serving dish.
