Cherry Cake

Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 3/4 cup vegetable oil
  • 3 eggs
  • 1 can cherry pie filling (21 ounces) with syrup

This is a dense, bread-like cake that is excellent for brunch or dessert.

Foodie Byte: Include the syrup with the cherries--just dump it all in. It will turn your batter dark, but it creates a wonderfully moist cake that will surprise and delight you!

Preparation

  1. Preheat oven to 350°F.
  2. Combine all ingredients and pour into a 13 x 9 inch pan.
  3. Bake 40 minutes or until middle is set and toothpick comes out clean.
  4. Sprinkle with powdered sugar and serve warm.
