Cooked Icing

Ingredients

  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 cup sugar
  • 1 stick butter (do not use margarine)
  • 1/2 cup white Crisco
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 teaspoon almond flavoring

An old fashioned cooked icing recipe that is sure to become a standard on family birthday cakes. Also see our Editor's commentary on birthday cakes!

Foodie Byte: As a substitute for water and cornstarch you can also use 1 cup milk with 4 tablespoons flour; made this way, though, the icing should be refrigerated.

Preparation

  1. Cook together cornstarch and water until thick and clear. Stir constantly—it doesn’t take very long, and it will get lumpy if you don’t stir it. Let cool completely.
  2. Beat together the remaining ingredients.
  3. Add the chilled mixture and beat until smooth.
