Couscous Cakes


  • 3/4 cup couscous
  • 1/2 teaspoon salt
  • 1/4 cup chopped fresh herbs; thyme, oregano, parsley
  • 1/2 can chickpeas drained and rinsed
  • 2 eggs
  • Sprinkle of salt and pepper when making the patties.
  • 3 tablespoons oil for sautéing

  1. In a medium bowl with a tight fitting cover combine couscous, salt and 1 cup boiling water.
  2. Cover and let sit for 5 minutes then uncover and fluff with a fork.
  3. Puree the herbs and chickpeas, salt and pepper until semi smooth.
  4. Mix the puree into the couscous along with the beaten eggs.
  5. Form into patties and gently place into heated frying pan and cook until crisp and browned; 4-5 minutes.
  6. Turn patties over and sauté until browned.
