- In a medium bowl with a tight fitting cover combine couscous, salt and 1 cup boiling water.
- Cover and let sit for 5 minutes then uncover and fluff with a fork.
- Puree the herbs and chickpeas, salt and pepper until semi smooth.
- Mix the puree into the couscous along with the beaten eggs.
- Form into patties and gently place into heated frying pan and cook until crisp and browned; 4-5 minutes.
- Turn patties over and sauté until browned.
