Cousin Annie's 7-Layer Salad with Thousand Island Dressing
Ingredients
- 1 1/2 cups mayonnaise
- 1/4 cup sweet pickle relish
- 1/4 cup ketchup
- 6 cups iceberg lettuce, chopped
- 2 cups frozen green peas, thawed
- 1 cup thin-sliced red onion (optional)
- 2 cups red, orange and green bell pepper, diced
- 2 cups tomato, seeded, diced
- 1 cup shredded Cheddar cheese
- 1 cup diced bacon, cooked crisp

Preparation
- To prepare Thousand Island dressing: combine mayonnaise, pickle relish and ketchup in bowl and whisk to blend. Cover and refrigerate to hold.
- To assemble salad: layer 4 cups lettuce in clear bowl. Top with layers of green peas, sliced red onions, diced bell peppers and diced tomatoes.
- Spoon Thousand Island dressing over top of salad. Top with shredded cheese and crumbled bacon. Serve chilled.
