Florida Pesto Pasta with Tomato-Basil Relish
Ingredients
- 2 cups fresh basil leaves
- 1/2 cup fresh oregano leaves
- 1/2 cup fresh parsley
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon fresh garlic, sliced
- sea salt to taste
- freshly ground pepper to taste
- 1/2 cup olive oil
- 1 pound fresh or dried pasta, cooked according to package directions
Preparation
- Place all ingredients except oil and pasta in a food processor or blender. Process until smooth. With motor running, drizzle in olive oil to make desired consistency. Taste and season the pesto with salt and pepper.
- Toss half of the pesto with the cooked pasta and stir lightly to evenly combine. Taste and add more pesto if desired. Top with Tomato-Basil Relish.
