Florida Pesto Pasta with Tomato-Basil Relish

Ingredients

  • 2 cups fresh basil leaves
  • 1/2 cup fresh oregano leaves
  • 1/2 cup fresh parsley
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon fresh garlic, sliced
  • sea salt to taste
  • freshly ground pepper to taste
  • 1/2 cup olive oil
  • 1 pound fresh or dried pasta, cooked according to package directions

Preparation

  1. Place all ingredients except oil and pasta in a food processor or blender. Process until smooth. With motor running, drizzle in olive oil to make desired consistency. Taste and season the pesto with salt and pepper.
  2. Toss half of the pesto with the cooked pasta and stir lightly to evenly combine. Taste and add more pesto if desired. Top with Tomato-Basil Relish.
