Fresh Basil Vinaigrette

Ingredients

  • 1 cup (packed) fresh basil (about 2 packages)
  • 1/3 cup red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 teaspoon Dijon mustard
  • 2/3 cup extra virgin olive oil

This emerald green dressing will heighten the flavor of any salad.

Why Try? You might normally think of seasoning a dressing with basil, but here, fresh basil leaves are the base of flavor and color.

Foodie Byte: You can substitute white wine vinegar or champagne vinegar if preferred. If you want to brighten up the flavor at all, a teaspoon of fresh lemon juice can be added – taste it, then adjust to your liking.

Preparation

  1. Process basil leaves in a food processor until they are evenly minced.
  2. Add the red wine vinegar, salt, pepper, sugar, and Dijon and pulse until thoroughly blended. Scrape down the sides of the food processor.
  3. With the food processor running, slowly pour in the oil in a thin stream until dressing is emulsified.
