Fresh Basil Vinaigrette
Ingredients
- 1 cup (packed) fresh basil (about 2 packages)
- 1/3 cup red wine vinegar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 teaspoon sugar
- 1 teaspoon Dijon mustard
- 2/3 cup extra virgin olive oil
This emerald green dressing will heighten the flavor of any salad.
Why Try? You might normally think of seasoning a dressing with basil, but here, fresh basil leaves are the base of flavor and color.
Foodie Byte: You can substitute white wine vinegar or champagne vinegar if preferred. If you want to brighten up the flavor at all, a teaspoon of fresh lemon juice can be added – taste it, then adjust to your liking.
Preparation
- Process basil leaves in a food processor until they are evenly minced.
- Add the red wine vinegar, salt, pepper, sugar, and Dijon and pulse until thoroughly blended. Scrape down the sides of the food processor.
- With the food processor running, slowly pour in the oil in a thin stream until dressing is emulsified.
