Fried Green Tomatoes
Ingredients
- 4 large green tomatoes, sliced 1/4-inch thick
- 1 cup vegetable oil for frying
- 2 eggs
- 1/2 cup milk
- * 1 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 cup breadcrumbs
- 2 teaspoons kosher salt
- 1/4 teaspoon black pepper
This hearty side dish features thick slices of fresh green tomatoes dipped into egg, flour and cornmeal mixture and pan fried until golden.
Why Try? It’s a great way to use your green tomatoes at the end of the season (they are so good you may even want to go to your local farmer’s market to buy more green tomatoes).
Foodie Byte: Make sure to let them sit on your kitchen counter for 2 to 3 days to ripen for the best flavors (they won’t turn red).
Preparation
- In a heavy skillet, heat the vegetable oil over medium heat.
- In a medium size bowl, whisk eggs and milk together.
- Scoop flour onto a plate.
- Combine cornmeal, breadcrumbs, salt and pepper and put on another plate.
- Dip the sliced tomatoes into flour and then into the milk and egg mixture. Dredge in breadcrumb mixture to completely coat both sides.
- Test the oil by adding a pinch of cornmeal and if it bubbles to the top it’s ready.
- Carefully fry the tomato slices for 3 to 4 minutes each side.
- Remove and drain on paper towels.
