Galette du Roi
Ingredients
- 2 round puff pastry sheets
- 1½ cups almond meal
- ½ cup sugar
- 2 eggs
- 1/3 cup softened butter
- 1 teaspoon vanilla
- 1 egg yolk diluted in a little water
- 1 “favor” or dried bean (or as many as you want to hide)
Traditionally served all the month of January in France, this Galette du Roi or Cake of Kings has a surprise “favor” inside and whoever gets the favor is crowned king or queen for the day! When my kids were little I would make this light and not too sweet treat all year round and put enough favors inside so that we had a veritable royal family. While I made the cake, I’d send the children off to make and color their own crowns; that way I could also hide the favors without them watching. The favors in France are tiny porcelain figurines but a dried bean works just as well!

Preparation
- Preheat oven to 400°F.
- Lay pastry on a floured board and cut each sheet into a circle.
- Poke a few holes with a fork into one pastry sheet; this will be the bottom sheet.
- Mix almond meal, sugar, eggs, butter, and vanilla in bowl.
- Spread filling over bottom pastry leaving the outer edge without filling.
- Place the “favor” in the filling but near the outer edge.
- Top with second pastry circle, press edges together with a fork and make tiny holes in the top to let any steam escape during baking.
- Brush with an egg yolk diluted in a bit of water.
- Bake for about 30-35 minutes until golden brown.
