Grandma Nehmer’s Chocolate Chip Cookie Bars

Ingredients

  • 3 cups one-minute oatmeal
  • 2 cups (12-ounce package) chocolate chip morsels
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1/2 pound European-Style Butter, unsalted, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 2 tablespoons milk
  • 2 eggs
  • 1 cup walnuts, chopped (optional)

Preparation

  1. Preheat oven to 350°F.
  2. Combine in small bowl; flour, baking soda and salt.
  3. In large mixing bowl, cream together softened butter, brown sugar, granulated sugar, vanilla extract and milk. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture and oatmeal; stir in chocolate chips and nuts.
  4. Spread cookie batter in large, greased pan. (Grandma's pan is a heavy roasting pan 12 1/2 x 13 x 2 inches).
  5. Bake for 22 to 25 minutes.
  6. Cool for about 5 minutes, then cut into bars, remove bars from pan and cool on baking rack.
