Grilled Glazed Peaches with Peach Thin Crisps
Ingredients
- 3 tablespoons peach preserves
- 8 peaches, halved
- 1 tablespoon orange juice
- 4 sheets phyllo dough, thawed
- 1/2 cup pecans, finely chopped
- 1/2 cup peach nectar
- 6 tablespoons brown sugar
- As needed vegetable oil
- 1 quart vanilla ice cream
Warmed fresh peaches and cold creamy ice cream. How do you top that for a summertime dessert combo? How about with some peach thins cookies?

Foodie Byte: While grilling up those plump fresh peaches, keep the pan of glaze on the grill to keep it warm. To add some more flavor, use butter instead of vegetable oil to coat the peaches before you grill.
Preparation
- Preheat oven to 375ºF. Preheat grill.
- Whisk together peach preserves and orange juice.
- Place 1 sheet of phyllo dough on a lined baking sheet. Brush with preserve mixture. Place another sheet on top and brush with preserve mixture. Sprinkle with pecans. Repeat process 1 more time.
- Bake 5 to 8 minutes or until brown and crisp. Let cool and break into pieces.
- In a small saucepan, heat peach nectar and brown sugar until sugar dissolves; keep warm.
- Brush each peach half with vegetable oil and grill for 2 to 3 minutes or until nice grill marks appear.
- Place 2 grilled peach halves on each plate; top each with a drizzle of peach nectar glaze, 2 small scoops ice cream and 3 to 4 pieces peach thin crisps.
