Homemade Chocolate Biscotti with Walnuts

Ingredients

  • 2 1/2 cups chopped walnuts
  • 4 ounces bittersweet chocolate
  • 1 cup sugar
  • 1 3/4 cups flour
  • 1/3 cup European cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 extra-large eggs
  • 1 teaspoon vanilla

Preparation

  1. Using a food processor or chopper, combine chocolate with sugar until chocolate is finely chopped.
  2. In a separate bowl, combine the flour, cocoa powder, baking soda and salt.
  3. In another bowl, mix eggs and vanilla together. Add the sugar mixture and the flour mixture alternately, and continue beating until you have a stiff dough and all ingredients are mixed in. Add the nuts.
  4. Remove dough from bowl and place on a floured surface to thoroughly mix in all of the nuts. Divide dough in half and shape into mounded logs.
  5. Place logs on a parchment paper-lined cookie sheet and bake 50 minutes at 300 degrees. Let cool for 10 minutes, but leave oven on.
  6. After cooling for just 10 minutes, slice each log into about 1-inch slices. Place slices on baking sheet with one cut side exposed. Bake for an additional 25 minutes.
  7. Flip slices to expose the other side and bake for a final 25 minutes. Cool and store up to 1 month.
