Homemade Chocolate Biscotti with Walnuts
Ingredients
- 2 1/2 cups chopped walnuts
- 4 ounces bittersweet chocolate
- 1 cup sugar
- 1 3/4 cups flour
- 1/3 cup European cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 extra-large eggs
- 1 teaspoon vanilla

Preparation
- Using a food processor or chopper, combine chocolate with sugar until chocolate is finely chopped.
- In a separate bowl, combine the flour, cocoa powder, baking soda and salt.
- In another bowl, mix eggs and vanilla together. Add the sugar mixture and the flour mixture alternately, and continue beating until you have a stiff dough and all ingredients are mixed in. Add the nuts.
- Remove dough from bowl and place on a floured surface to thoroughly mix in all of the nuts. Divide dough in half and shape into mounded logs.
- Place logs on a parchment paper-lined cookie sheet and bake 50 minutes at 300 degrees. Let cool for 10 minutes, but leave oven on.
- After cooling for just 10 minutes, slice each log into about 1-inch slices. Place slices on baking sheet with one cut side exposed. Bake for an additional 25 minutes.
- Flip slices to expose the other side and bake for a final 25 minutes. Cool and store up to 1 month.
