Jasmine Rice & Vegetable Medley

Ingredients

  • 2 tablespoons melted butter
  • 3/4 cup jasmine rice
  • 1 cup chopped celery
  • 1 chopped zucchini
  • 1/2 cup peas
  • 1/2 cup shredded carrot
  • 3 tablespoons fresh herbs; thyme, oregano, rosemary
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 3/4 cups chicken stock

The perfect one dish side to serve with fish, chicken, beef or pork!  Mix and match your favorite veggies!

Preparation

  1. Preheat oven to 375°F.
  2. Place all ingredients in a baking pan and mix together well.
  3. Bake for 40-45 minutes.
  4. Fluff with fork prior to serving.
