Lemon Poppy Seed Muffins
Ingredients
- 1 package (18 1/4 ounces) yellow cake mix
- 1 1/4 cups water
- 1/3 cup vegetable oil
- 3 eggs
- 2 tablespoons McCormick® Poppy Seed
- 1 tablespoon McCormick® Pure Lemon Extract
Muffins are a snap when you start with a cake mix. These muffins, speckled with poppy seeds and flavored with lemon extract, make a great breakfast or tea-time treat.

Preparation
- Preheat oven to 350°F. Lightly grease or line 24 muffin cups with paper baking cups.
- Mix all ingredients in large bowl with electric mixer on low speed 30 seconds or until moistened. Beat on medium speed 2 minutes. Spoon batter into prepared muffin cups, filling each cup 2/3 full.
- Bake 18 to 23 minutes or until toothpick inserted into muffin comes out clean. Cool completely on wire rack.
