Little Jewels Cookies
Ingredients
- 2 tablespoons each raspberry and apricot preserves
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1/3 cup sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 large egg yolks, for egg wash
- 1 teaspoon water, for egg wash
- Sprinkles for dusting (optional)
This delightful Little Jewel of a cookie takes some time to make and is quite small, but the end result is a dainty, elegant dessert perfect for tea time guests.

Preparation
- Preheat the oven to 375°F.
- In a mixing bowl beat together cream cheese, butter and sugar on medium speed until pale and fluffy. Add flour and salt and beat on low speed until well mixed.
- Divide dough into three balls and shape each ball into a large disk and 1/8-inch thickness. Place disk on a lightly floured piece of parchment paper layering all three disks on a sheet pan with parchment paper between all 3. Chill 20 minutes.
- Pull out one disk and place on a lightly floured surface. With a 3-inch star shaped cutter, cut out dough.
- Mix yolks with water making the egg wash.
- Spoon 1/2 teaspoon preserves into center of each star and brush the edges with egg wash. Bring points of the star to the center, you may have to pinch or press down to keep points connected.
- Space about 1-inch apart on parchment lined baking sheets. Chill 20 minutes.
- When ready to bake, brush tops with more egg wash and add a pinch of sprinkles on top.
- Bake for 18-20 minutes or until golden brown. Let cool on wire racks.
