Luscious Lemon Curd
Ingredients
- 1 cup lemon juice, fresh
- 4 teaspoons lemon zest, finely grated
- 1 cup sugar
- 6 large eggs
- 1 1/2 sticks (12 tablespoons) butter, unsalted, cut into bits
Lemon curd is a classic English condiment (known as Lemon Cheese over there). It’s delightful for dipping strawberries or blueberries, or spreading on toast or biscuits.

Preparation
- Whisk together juice, zest, sugar and eggs in a 2-quart sauce pan.
- Stir in butter and cook over low heat, stirring constantly, until curd thickens and the first bubble appears on the surface, about 6 to 10 minutes.
- Remove from heat and cool or refrigerate. Makes 3 cups.
