Mini Meatloaf with Ground Sirloin and Pork

Ingredients

  • 1 1/2 pound ground sirloin
  • 1/2 pound ground pork
  • 2 large eggs
  • 2 slices firm white bread, torn into small pieces
  • 1 medium onion, finely chopped
  • 1 celery rib, finely chopped
  • 3 garlic cloves, minced
  • 1 cup ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon hot sauce
  • 1 tablespoon parsley, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup chili sauce
  • 4 slices bacon

Preparation

  1. Preheat oven to 375°F.
  2. Combine all ingredients except ground sirloin, ground pork, chili sauce and bacon in a large bowl and mix thoroughly.
  3. Add sirloin and pork and mix.
  4. Portion mixture into eight ungreased mini loaf pans. Top each mini-loaf with 1 tablespoon chili sauce and spread to coat surface evenly.
  5. Cut bacon strips in half and top each mini-loaf with a half strip of bacon.
  6. Bake for 1 hour or until mini loaves are cooked through and bacon is crisp.
  7. Let rest for five minutes and serve.
