Parisian Rice


  • 1 cup long-grain brown rice
  • 2 tablespoons olive oil
  • 1/2 cup minced onion
  • 1 tablespoon minced garlic
  • 1, 4-ounce can mushroom slices with liquid
  • 1 teaspoon dried thyme
  • 2 tablespoons dried parsley
  • 1 tablespoon lemon zest
  • 2 1/2 cups plus 1 tablespoon vegetable or reduced-sodium chicken broth
  • 1/2 teaspoon kosher salt
  • 1/2 cup chopped parsley (for garnish)

Mushrooms, herbs and nutty brown rice combine to create a delicious side for roast chicken or beef kebabs from the grill.


  1. Wash the rice in warm water until the water runs clear.
  2. Put oil, onion and garlic in the rice cooker and sauté 3–4 minutes to soften onion.
  3. Add all remaining ingredients. Stir well and close the cooker. Cook until rice cooker goes to ‘warm’ function.
  4. Carefully open and stir, then replace lid. Allow to stand for 10 minutes. Sprinkle with parsley and serve.
