Pomegranate Syrup
Ingredients
- 4 cups pomegranate juice
- 1/2 cup granulated white sugar
- 2 tablespoons lemon juice
Pomegranate syrup is made by reducing a mixture of pomegranate juice, sugar and lemon juice to a rich syrup-like consistency. To make pomegranate molasses, simmer the pomegranate syrup an additional 30 minutes, or until the mixture is reduced to an intense glaze-like consistency.

Preparation
- Combine pomegranate juice, sugar and lemon juice in a nonstick 4 qt. saucepan and whisk to blend.
- Bring mixture to a boil, reduce heat and simmer for 45 to 70 minutes, or until desired consistency, whisking occasionally. (Do not overcook; molasses/syrup will continue to thicken as it cools.)
- Cool completely. Store refrigerated.
