Pomegranate Syrup

  • 1/2 cup granulated white sugar
  • 2 tablespoons lemon juice

Pomegranate syrup is made by reducing a mixture of pomegranate juice, sugar and lemon juice to a rich syrup-like consistency. To make pomegranate molasses, simmer the pomegranate syrup an additional 30 minutes, or until the mixture is reduced to an intense glaze-like consistency.

Preparation

  1. Combine pomegranate juice, sugar and lemon juice in a nonstick 4 qt. saucepan and whisk to blend.
  2. Bring mixture to a boil, reduce heat and simmer for 45 to 70 minutes, or until desired consistency, whisking occasionally. (Do not overcook; molasses/syrup will continue to thicken as it cools.)
  3. Cool completely. Store refrigerated.
