Roasted Tomato Tart
Ingredients
- Ingredients for the tart filling:
- 1 pie crust
- 1½ cups ricotta
- 1/2 cup Parmesan
- 2 eggs
- 1/4 teaspoon salt & 1/8 teaspoon pepper
- Ingredients for Roasted Tomatoes:
- 8 Campari tomatoes
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
My family loves this tart for breakfast, lunch and dinner. Roasted tomatoes are so easy to make and use to top tarts, on sandwiches and finely chopped are perfect in sauces! This tart base is infinitely versatile! You can combine the roasted tomatoes with fresh asparagus, sliced zucchini, ham or even cooked bacon for a heartier main dish! Preparation
- Method for Roasted Tomatoes:
- Preheat oven to 450°F.
- Cut tomatoes in half and squeeze to remove most of the seeds.
- Place tomatoes cut side up on baking sheet.
- Drizzle with olive oil.
- Sprinkle with garlic, salt and pepper.
- Roast for 30 minutes.
- Method for the tart:
- Preheat oven 350°F.
- Blind bake or half bake the tart shell for 10 minutes.
- Mix together the ricotta, Parmesan, eggs, salt and pepper.
- Spread into the tart shell.
- Top with roasted tomatoes.
- Drizzle with olive oil.
- Bake for40-45 minutes.
- Serve hot or room temperature.
