- 1 cup jam of any flavor
- Heat oven to 325ºF. Cream butter and sugar. Add egg yolks and flavorings. Add flour and beat just until all ingredients are combined. Roll dough out and use cookie cutters in any desired shape. (A linzer cookie cutter will provide shapes for the top half of the cookie.). Cut inserts into half of the cookies to allow the jam to show through.
- Bake 20 minutes, let cool. Spread lower half with jam and put the half that has a decoration cut out on top, letting the jam show through. Can sift confectioners sugar over cookies for an extra touch.
- NOTE: Fruit butters work well with these cookies due to their stronger flavor, although the color may be lighter than if you use jam.
