Uncle Bobs Banana Split Icebox Cake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 can (20 ounces) crushed pineapple, drained well
  • 3 ripe bananas, sliced
  • 1/2 cup butter, unsalted, melted
  • 2 cups confectioners' sugar
  • 2 eggs (pasteurized)
  • 2 cups heavy whipping cream, whipped
  • 1 small (8 ounce) jar maraschino cherries, drained well
  • 1 small (4 ounce) package pecans, chopped

Here’s a family friendly dessert that’s perfect for summer potlucks, picnics and family reunions. You can’t have too many desserts at those kinds of get-togethers, and this sweet and fruity dessert always scores well with young and old.

Why Try? This is a dessert that can be made ahead of time (in fact, it must be). So that makes it a good choice for potlucks and such.

Foodie Byte: It’s very important to get the pineapple as dry as possible. Once you drain it, lay it out on a cloth towel, roll it up and squeeze it dry.

Preparation

  1. Mix graham cracker crumbs and the melted butter. Press into a 13x9x2 pan.
  2. Combine sugar and eggs. Spread on top of graham crackers in pan.
  3. Place well drained pineapple on top of the sugar and eggs.
  4. Place sliced bananas on top of the pineapple.
  5. Cover with whipping cream.
  6. Chill at least 3 hours or overnight before serving.
