Warm Seasoned Olives
Ingredients
- 6 cups olives with pits
- 1/4 cup olive oil
- 6 garlic cloves, peeled and sliced
- 12 thyme sprigs
- 6 orange zest, 1/4" x 3" strip
Olives take on a new dimension when brightened by fresh herbs and spices.
Why Try? These spiced olives make a tasty appetizer to serve at parties. The new flavors are enhanced by warming the olives before serving.
Foodie Byte: The olives can be made a few days in advance and either reheated before serving or simply served at room temperature. Feel free to substitute other herbs such as marjoram, savory, rosemary, or tarragon for the thyme, or use a mix of herbs. Lemon zest makes a fine substitute for orange. Add spice by adding a small dried chile to the mix or by sprinkling the mix with paprika. Ideally the olives should be a mix of different colors and types, such as kalamata, nicoise, picholine, and/or Provençal.
Preparation
- Drain and rinse olives.
- Heat olive oil in a heavy bottomed skillet over low heat. Add olives, garlic, rosemary and orange zest. Stirring occasionally, warm the olives until heated through, approximately 5 minutes. Serve immediately or hold in the warm pan.
