Mashed Potatoes with Sour Cream & Fresh Chives

These are truly the ultimate in mashed potatoes. The fresh chives add a bright flavor to dish that’s no longer ordinary.

Why try? Cream cheese gives these potatoes a luxurious creaminess that comes through even if they are reheated for another meal.

Foodie Byte: For a variation on this recipe, try baking these potatoes in a casserole dish after they’ve been mashed at 350˚F for 20 minutes or until they take on a golden color on top.

Ingredients

  • 9 potatoes, peeled, cut into 6 pieces
  • 1 8 oz. package cream cheese, room temperature
  • 1 cup sour cream
  • 1/2 stick butter, room temperature
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup chives

Preparation

    Fill large pot with cold, salted water and add potatoes. Put over high heat and let come to simmer. Let simmer for about 20 minutes or until potatoes are tender throughout.

    Beat cream cheese, sour cream, and butter with a paddle attachment until blended.

    Add drained, hot potatoes and beat on medium speed until smooth. Add salt, pepper, and chives. Mix only until combined.

    Serve immediately.
