A thick, well-marbled USDA Choice steak deserves to be properly, carefully grilled. You want it to be nicely seared on the outside with professional-looking grill marks, and tender and juicy inside. View this step-by-step photo tour to see how it’s “done.”

 

Remove the steak from the refrigerator and add desired seasonings. Allow the steak to reach room temperature before putting it on the grill (about 30 minutes).

Using tongs, place steak on well-oiled grill at a diagonal angle across the grates.

After searing for about 2 minutes, re-position steak at the opposite diagonal angle and cook for another 2 minutes or so to get professional-looking criss-cross grill marks.

Flip the steak over and follow the same procedure to get the criss-cross grill marks on the other side of the steak.

Once you’ve seared the steak on both sides directly over the hot coals, move the steaks to another spot on the grill away from the direct heat to keep it from becoming too charred. For medium doneness, 1-inch thick steaks should be cooked about 5-6 minutes per side.

After removing the steaks from the grill, let them “rest” for about 5 minutes. To keep them warm, “tent” them under some aluminum foil.

Serve your masterpiece along with some nice grilled corn on the cob for the perfect summertime feast.
